  1. Grate the zest of one orange and squeeze the juice.

  5. When the balls are golden brown/blonde brown remove them from the oil.
  6. Drizzle honey over a pile of fritters and you can sprinkle icing sugar over the top....if you have some extra ricotta you can dollop some onto the fritters AND you can also serve with some candied orange zest (I didn't have any in my humble kitchen).

Scoop the fritters out and drain briefly on paper towel. Dust with icing sugar and serve straight away, with syrup and honey, if using, on the side for. Peel all the oranges by cutting the skin and white pith away, to. Top with fresh raspberries, and drizzle with honey. Use the biscotti cookies as spoons.
